Step 1 - Purchase OXO Good Grips Spiralizer on Amazon.com 


Step 2 - Get some fresh zucchini, wash and cut ends 

Step 3 - Spiral away with the green blade. It takes a tiny bit of practice, you have to apply pressure to get the spiraling underway. The design for this kitchen tool, especially the base where it grips to the counter top is key to the effectiveness of this tiny machine. 

Be very very careful, the blades are dangerously sharp, I learned the hard way, I cut myself today. 

Three zucchini makes enough for 3 people, regular size servings. If you have a hungry crowd, or its a cold cold day, calculate 2 zucchinis per person. Cut them in 1/2 otherwise the noodles/zoodles are very long. 

Step 4 - Saute garlic, ginger and peppers in olive oil. Start with the garlic, then add ginger and peppers. You can use scallions, shallots, whatever your preference. 

Step 5 - Toss in zuchini and stir fry 2 or 3 minutes, the noodles/zoodles will continue to cook after you take them off the burner. I seasoned with lots of fresh cracked pepper and instead of salt, I used low sodium soy sauce, just like Grandma Chichi did. 

Once plated I sprinkled with fresh Parmesan Cheese.   They were delicious !  A great substitute for pasta.  Most recipes have you add water to the pan, DONT !
